Low Carb/Gluten-free Recipe

Makes 9 muffins

1 tablespoon baking powder
1/3 cup Low Carb Sweetener ( I use Lakanto Monk Fruit Sweetener)
1 teaspoon cinnamon
2 eggs, lightly beaten
1 cup water
2 tablespoons vegetable oil
1/2 teaspoon orange extract
1 cup fresh or frozen cranberries
1/2 cup chopped pecans or walnuts

Heat the oven to 350°F. Lightly coat 9 muffin cups with baking spray.
