6 tablespoons unsalted butter softened
½ cup light brown sugar
1 teaspoon vanilla extract
1 large egg
1 1/2 cups self-rising flour
1/2 cup buttermilk
1 cup blueberries

For the streusel:

In a medium mixing bowl combine flour and sugar.
Using your fingers mix the sugar with the flour and butter until clumps form. Set aside.

For the cake:

Preheat oven to 350°F.

In a large mixing bowl add all the cake ingredients. With a hand beater mix the ingredients until smooth.

Grease an 8-inch baking pan with butter. Spread the cake mixture evenly throughout. the pan.
Sprinkle the berries on top of the cake dough.
Sprinkle the streusel topping over the top of the berries. Bake the cake for 50-60 minutes. When the cake is fully baked, a toothpick should come out of the center clean. Cool on a wire rack.
